It’s the holiday season and we’ve got baking on the brain! Your Keto diet doesn’t have to stop you from taking part in all the traditions you’ve grown accustomed to. We’ve teamed up with Nutty Gourmet to create these Maple Walnut cookies that are perfect for the season! Walnuts and baking go hand in hand, and with less than 2 net carbs per serving, you can do all the holiday indulging without the holiday weight gain!
Steps
- Preheat oven to 350 degrees
- Cream butter and erythritol together using a mixer at medium high speed
- Add vanilla extract and mix till combined
- Grind Nutty Gourmet walnuts into a doughy texture using a food processor or blender
- Add almond flour and ground walnuts to mixer and mix until dough forms
- Place dough on parchment paper and top with another piece of parchment
- Roll out dough to roughly ⅓-½ inch thick
- Use cookie cutter to cut into desired shapes
- Transfer cookies to a parchment lined baking sheet using a spatula
- Bake at 350 degrees for 7-8 minutes until golden brown
- Move baking sheet to a cooling rack and let cool completely
- Mix all glaze ingredients together
- Dip top of cooled cookies into glaze to coat
- Top cookie with whole walnut
- Allow glaze to set
