Keto Fried Chicken Tenders
Fried chicken tenders are a classic for summer, but that crispy breading isn’t so Keto-friendly. Not to worry! We’ve got the perfect zero carb alternative that will make you think you’ve gone to Keto fast food heaven! These tenders are an easy family-friendly option that is sure to delight Keto’ers and non-Keto’ers alike!
Directions:
- Pour avocado oil into a medium sized saucepan and place on stove over high heat
- While oil is heating up, crack eggs into a medium sized bowl and whip together
- Combine whey protein powder, salt, and pepper in a medium sized bowl
- Use a thermometer to measure oil temperature: ideal temperature is 350℉ - 365℉ (If you don’t have a thermometer, let oil heat for at least 5 minutes on high)
- Once oil is ready, dip a raw chicken tender into egg and submerge fully. Then dip chicken tender into protein powder mixture until well coated
- Gently add coated chicken into hot oil
- Repeat with remaining tenders (you may need to cook chicken in two batches to avoid overcrowding your saucepan)
- Flip chicken tenders over once golden brown on the first side, about 2-3 minutes (adjust heat if chicken is browning too quickly or not quickly enough)
- Continue frying chicken until both slides are golden brown and internal temperature is 165℉
- Remove chicken tenders from oil with tongs and place on a paper towel lined plate
- Sprinkle with additional salt, and any other seasoning you desire
