We think that chocolate is practically the official food of February, so why not celebrate with a decadent dessert? The Simply Delish instant chocolate pudding is so delicious, we often eat it straight out of the bowl! But in case you want to get a little fancy, we used it to inspire these fun Rocky Road Pudding jars. They’re quick to make and even quicker to devour! Enjoy!
Steps
- Prepare pudding mix with milk as directed on box
- Chill pudding in fridge while preparing marshmallow
- Add allulose, erythritol and water to sauce pan
- Stir together and heat until it reaches 230 degrees
- While saucepan is heating up, add egg white to the bowl of a stand mixer and whip at high speed until it reaches soft peaks
- Pour gelatin powder over 2 ½ Tbsp water
- Once at 230 degrees, remove sweetener mixture from stove and stir in gelatin mixture
- With mixer at medium speed, slowly pour the sweetener mixture into egg white until fully combined
- Turn mixer up to medium high speed and let mix until it reaches a thick, glossy, and creamy texture (will take several minutes)
- Start filling mason jars by adding a layer of chopped pecans in each jar
- Add pudding on top of pecans and then add a layer of marshmallow
- Repeat each layer
- Top with whipped cream, more pecans, and chocolate chips
- Serve immediately or chill until ready to eat
